I love canned pineapple.

I have never eaten fresh....I'll have to try it.

I love pineapple upside down cake....yum.

If you like canned pineapple you will really enjoy fresh pineapple. Just make sure you get one that is completely ripe or even a bit over ripe. If it's not yet at that point it doesn't taste nearly as good as even canned pineapple. Also some eat the core, others don't..in the can there's no core (usually).

I have a great recipe with pineapple -



Ginger Spicy Chicken

2 whole chicken breasts, split, skinned, boned (you can use 4 cutlets ot "boneless breasts")
2 tbsp vegetable oil
1 med. red bell pepper, cut into strips
1 med. green bell pepper, cut into strips
1 8 oz. can pineapple chunks in juice, UNdrained
1/2 cup Pace Picante sauce or equivalent
2 tbps chopped cilantro or parsley
2 - 3 teasp. grated fresh ginger or 1 teasp ground ginger

Heat oil in large skillet, add chicken, cook about 5 min. a side or until lightly browned and cooked through. Remove & reserve.

Add all other ingreds., cook, stirring, 5-7 mins or until peppers are tender and sauce is thickened. Return chicken to skillet an heat through.

Excellent over rice.

I love Pineapple. In the Summer time I like to make fruit salad .Here is a nice way to serve it.  Cut the Top off like a pumpkin ,Use a Pineapple core to take the entire pineapple out cut it up and add to your fruit salad.  Then put your fruit into the empty pineapple and then put the top back on and  then display on the table.  2wink

Wizer....I ate a slice of fresh pineapple today off the buffet bar....and for some crazy reason....I thought of this thread you started.... big laugh

Now how crazy is that?   crazy  I must spend too much time on the internet....
