I made a great new dish tonight. I think I'll call it chicken floratin. 

Carmelize about 1/2 cup of chopped sweet onion and a clove of garlic in olive oil
Add two diced up raw chicken breast and brown with the onions.
When chicken looks almost done add 1 can of italian chopped tomatoes with juice.
I then threw in about 2 cups of frozen chopped spinach and let the flavors blend.
Of course, I added sweet basil, oregano, salt and pepper.
I threw in about 4 cups of precooked spaghettis and parm cheesed and tossed it all together.
It rocked and looke pretty too.

Sounds delicious.

Especially after the TV dinner I just polished off. That's like 3 nights in a row of Swanson 3 course meals...usually the potatos are frozen in the middle but I don't feel like going to the trouble of tossing it back in again.

YUM-O!!!!!! Why wasn't I invited? LOL I invent things all the time. A couple of times a year I make a HUGE pot of spaghetti sauce from scratch and freeze it in small containers. I still have some in the freezer from Christmastime. It comes out a little different every time I make it - that's part of the fun. I have not been cooking like I used to, and I intend to start again, real soon! I want to make spinach lasagne roll-ups again. It's been years. They are a pain in the ass but worth it.

(Yeah Wizer, I know, you're only a couple of hours away. You can have some!)

Last night I made glazed pork tender medallions warmed up some left over green beans my husband cooked on Sunday
and had that for lunch. I eat salads a lot. I love salad for lunch usually and granola and yogurt for breakfast.

I like to have leftovers, too. I have a yummy and easy chicken and rice casserole recipe that my mother used to make that I adore - haven't made it in over a year now. No excuse for that! I think I will make it next week! I love salad too, I use spinach leaves instead of lettuce most times. And there's nothing like a Jersey tomato LOL

I think we already had this discussion...didn't we? You were going to come out for lunch, I was going to check you out...I mean check your eyes out, and then you were going to hook up with your friend who lives nearby.

I was thinking the same thing....yuk...he should have at least stirred the potatoes and put it back in for additional minutes.... Wink
